Dutch Oven cooked Rabbit

1 Rabbit quartered
1 cup celery cut on a bias
1 medium onion, diced
2 cloves garlic, chopped fine
1/2 cup dry red wine (something you would drink)
3 tbsp Olive oil
Salt & Pepper

EZ Crock Pot Rabbit

1 Rabbit
1 can Cream of Mushroom soup
3 cans of water
1 medium Onion course chop
3 Celery stalks chopped
3 Carrots chopped fine
1 tsp Cayenne Pepper

Salt and red pepper
3 tbsp Veg Oil
1 medium tomato chopped
2 Onions, large, chopped

Fried Rabbit

1 Rabbit
3 tbsp. vegetable oil
1 egg, beaten
1 cup Bread crumbs
Salt & pepper
1 cup milk or cream
2 tbsp. flour
Lemon slices
Parsley
Clean and dress rabbit
Bring a pot of water to a boil then reduce to simmer
Add rabbit and simmer 15 minutes and drain.

4 tbsp. butter
2 tbsp. chopped parsley
1 tbsp. chopped chives
2 tbsp. flour
1 cup dry white wine

1 med. chopped onion
2 tbsp. butter
1 garlic clove, chopped
1/2 c. chopped celery
3/4 c. water
1/4 c. dry wine
1 c. ketchup
2 tbsp. vinegar
