VENISON STEW

This is a classic venison stew recipe.  Browning the meat before adding the rest of the ingredients is essential to getting the most flavor in this dish.

This dish is almost too easy but the results are fantastic. The onion and bacon will flavor the chop while it cooks.

5 pounds venison marrow bones, cut into 2 inch pieces
1 can tomato paste (6 ounce)
2 cups onions chopped
1 cup celery chopped
1 cup carrots chopped
2 cups red wine (something you would drink)
20 black peppercorns
5 garlic cloves, peeled

1/2 head cabbage, sliced thin
1 large onion, sliced & broken apart
5 stalks celery, sliced into very thin strips

Game Marinade

2 medium onions chopped fine
1 carrot thinly sliced
2 stalks celery chopped
2 cloves of garlic chopped fine
2 tsp. salt
1 tsp. dried thyme
1 tsp. dried parsley
2 bay leaves
12 whole black pepper corns
2 whole cloves
2 cup red wine
1/2 cup cider vineger
1/2 cup salad oil

Pepper Steak (Venison)

1 1/2 lbs. venison sliced thin
3 tbsp. butter
1 large onion, sliced
1 green pepper, sliced
1/2 lb. sliced mushrooms
1/2 tsp. garlic powder
1/4 cup soy sauce
1/2 cup. beef stock
1 tsp. tomato puree
1/3 cup cold water
1 1/2 tsp. cornstarch

Slow Simmered Venison with Stewed Tomatos

2 lb. Venison steak cut thin
1 can mushrooms
1 qt. stewed tomatoes (see Special Stewed Tomato Recipe)
Dip venison steaks in flour seasoned with salt and pepper.
