Cranberry Chutney

This is a quick and easy recipe for a great cranberry side to any of your wild game dishes.

Cranberry Chutney

1 - 16 oz package fresh cranberries
3/4 cup brown sugar, packed
1/2 cup raisins
1/2 cup chopped celery
1/2 cup each chopped apples and pears
1/2 cup orange juice
1/4 cup coarsely chopped walnuts
2 tbsp candied ginger, minced
2 tbsp lemon juice
1/4 tsp ground clove
PREPARATION:
In large pot add cranberries, brown sugar, raisins, celery, apples, pears, orange juice, walnuts, ginger, lemon juice, cloves, and onion.
Heat to a boil stirring constantly.
Lower heat and simmer uncovered for 15 minutes
Stir occasionally until cranberries begin to “pop”
Cool and store in a glass or non-reactive container

Serve as a condiment to Pheasant or other wild game
