Roast Tenderloin of Wild Boar with Dill / Honey Mustard Plate Sauce
Of course this recipe will work with park but using the Boar makes for a interesting and exotic twist.
Roast Tenderloin of Wild Boar with Dill / Honey Mustard Plate Sauce
1 to 1-1/2 lb Wild Boar Tenderloin
1/2 Cup Whole Grain Mustard
1/2 Cup Honey
3 Tbsp chopped fresh dill
1 can chicken stock (broth)
Salt & Pepper
Roasted Boar
Season the boar tenderloin with salt and pepper and sear until browned on all sides in a cast iron fry pan.
Place the boar in the cast iron pan in oven for 10-15 minutes at 350 degrees.
When the temp of the boar reached 165-170 degrees - it’s done.
Plate Sauce
Bring 1/2 can Chicken Stock to a boil in medium sauce pan.
Remove from heat and add 1/2 cup of honey and 1/2 cup of mustard
Whisk in until smooth.
Add the Dill and season with Salt & Pepper
Allow this to simmer & reduce until it coats the back of a spoon
Slice tenderloin into 3/4″ to 1″ medallions for service
Place several spoonfulls of the Honey Mustard sauce in the center of the plate and allow it to spread out on plate.
Top with Wild Boar medallions.
Serving suggestion - serve with roasted root vegetables and wild rice
