Buffalo Chili with three beans

This is my favorite chili recipe that I’ve adapted to work with the Buffalo meat, I hope you enjoy it.  Also, dont be afraid to add the Chocolate - its going to add great flavor to the chili!

Buffalo (Bison) Chili with Three Beans
 
1 lb Buffalo meat, course ground
2 Tbsp Canola Oil
2 Tbsp chili powder
2 Tbsp dried ground cumin
1 - Jalapeno pepper - seeds removed and diced fine
3 - Cloves minced garlic 
3 - Bell peppers - mix red, green, yellow - diced in 1/2″ pieces
2 - Large onions - diced in 1/2″ pieces
1/2 - tsp crushed red pepper
2 - Large tomatoes chopped
2 - 8 oz cans each red beans, black beans, & white beans – all drained and rinsed
1 can sweet corn 
1 square unsweetened baker’s chocolate
1 bottle of beer – Corona works great!
2 tbsp chopped cilantro

Cook meat in 2 tbsp of oil in a large non-reactive dutch oven (cast iron works great) until the meat is no longer pink.
Add Onions & Peppers, Jalapeno, Chili Powder, Cumin and the Cholcolate now.

Allow to cook for 10 minutes until onion and peppers begin to soften
Stir in remaining ingredients except cilantro

Simmer gently for 40 to 45 minutes, stirring frequently
Taste and adjust seasonings (Chili Powder / Cumin) as desired.
Add the cilantro just before serving.
 
Serve with Sour Cream, Cheese and Guacamole; Corn Bread is a nice side as well.
