Orange Glazed Elk Roast

This recipe works well with any roast cut from your wild game.  We listed this with Elk but Venison, Caribou or any other roast would work as well.

Ingredients and Directions

4 lb Elk Roast
1 tb Oil
Salt Pepper

Basting Sauce:
1 cup Orange juice
2 tbl Lemon juice
1/2 tsp Allspice
1/2 tsp Crushed Juniper berries

Glaze: 2 tb Butter
2 tbl Orange juice
1 tbl Brown sugar
1/2 cup Wild currant jelly

Smear roast with oil and season with salt and pepper.
Sear in the oven at 450 degrees F for 15 minutes.
Reduce oven temp to 325 F and cook roast covered for 60 minutes.

Basting Sauce:
Combine the orange juice, lemon juice and allspice in a bowl and baste roast every 15 min.

Glaze:
Combine the butter, sugar, orange juice and jelly.
Brush on the roast and cook uncovered another 15-20 min.
