Fried Rabbit

1 Rabbit
3 tbsp. vegetable oil
1 egg, beaten
1 cup Bread crumbs
Salt & pepper
1 cup milk or cream
2 tbsp. flour
Lemon slices
Parsley

Clean and dress rabbit
Bring a pot of water to a boil then reduce to simmer
Add rabbit and simmer 15 minutes and drain.
Cool rabbit and once cold, cut into serving pieces.
Dip pices of rabbit into beaten egg, then into bread crumbs seasoned with salt and pepper
Saute in hot vegetable oil until brown on all sides.
Remove to warm platter.
Add flour to remining oil (add additional if needed)
Brown flour in fat to make a roux
Add milk or cream and stir to make gravy.
Bring to boiling and pour over rabbit.
Garnish with sliced lemon.
Add parsley.

Serves 4.
