Partridge in Sherry Wine Sauce
Two Partridges Cleaned and Cut into pieces
All Purpose Flour
Salt & Pepper
1/3 Cup salad Oil
1 tsp. dried tarragon
1 Cup Sour Cream
1-1/2 Cup Sherry
Mix Flour with Salt & Pepper
Roll partridge in flour and salt & pepper mixture to coat
Brown in oil in a heavy skillet or dutch oven
Arrange pieces in the bottom of dutch oven or large casserole
Add tarragon and toss with partridge
Add 1 cup sour cream
Add 1-1/2 cups sherry
Mix throughly to cover and coat the partridge
Bake at 325 degrees for 1-1/2 hour
