Venison Sukiyaki

1 lb. Venison sliced very thin
1/2 head cabbage, sliced thin
1 large onion, sliced & broken apart
5 stalks celery, sliced into very thin strips
1 can cream of mushroom soup
4 tbsp. soy sauce
1 can bean sprouts
1 can mushroom pieces
Cut meat in very thin strips

Fried Rabbit

1 Rabbit
3 tbsp. vegetable oil
1 egg, beaten
1 cup Bread crumbs
Salt & pepper
1 cup milk or cream
2 tbsp. flour
Lemon slices
Parsley
Clean and dress rabbit
Bring a pot of water to a boil then reduce to simmer
Add rabbit and simmer 15 minutes and drain.
Cool rabbit and once cold, cut into serving pieces.

Mushroom Moose Steak

4 moose steaks
1 small onion, chopped fine
4 tbsp. butter
1 cup chopped mushrooms
2 tbsp. flour
1/2 cup sour cream
In a heavy skillet with a lid brown onions in 2 tbsp butter
Add steaks and sear steaks on both sides
Cover and simmer for 30 minutes
Add mushrooms and remaining 2 tbsp. butter to the skillet.

Game Marinade

2 medium onions chopped fine
1 carrot thinly sliced
2 stalks celery chopped
2 cloves of garlic chopped fine
2 tsp. salt
1 tsp. dried thyme
1 tsp. dried parsley
2 bay leaves
12 whole black pepper corns
2 whole cloves
2 cup red wine
1/2 cup cider vineger
1/2 cup salad oil
Mix everything together and pour over venison or any game meat in a non-reactive container

Pepper Steak (Venison)

1 1/2 lbs. venison sliced thin
3 tbsp. butter
1 large onion, sliced
1 green pepper, sliced
1/2 lb. sliced mushrooms
1/2 tsp. garlic powder
1/4 cup soy sauce
1/2 cup. beef stock
1 tsp. tomato puree
1/3 cup cold water
1 1/2 tsp. cornstarch

Currant Jelly & Wine Sauce

1 small jar currant jelly
2 tbsp. vegitable oil
1 small minced onion
3 tbsp. vinegar
2 cup red wine
Salt & pepper
In a sauce pan cook onions in the oil until tender
Add Current Jelly, red wine and vinegar
Cook on medium heat until jelly is completly disolved
Simer to reduce liquid until thickened into sauce
Salt & Pepper to taste

Bacon Roasted Wild Turkey

1 (10-12 lb.) wild turkey cleaned
Salt & Pepper
1 large onion, chopped
1 stalk of celery chopped
1 carrot chopped
2 tsp. Poultry Seasoning
1 tsp. sage
1 lb. sweet pork sausage
1 1/2 qt. soft bread crumbs

Crispy Duck with Apples

1 Duck, cut in half lengthwise
2 Large apples, cored and sliced
2 Large onions, peeled and sliced
